Talk about flour power.
On the heels of Benicia’s new One House Bakery, another bread-focused bakery with some pretty hefty credentials has opened in the East Bay, this time in San Leandro.
Iliana Berkowitz unveiled her brick-and-mortar, As Kneaded Bakery, at 585 Victoria Court after years of developing a loyal fan base through her pop-ups and bread club before expanding to independent grocery stores, farmer’s markets and restaurants around the Bay Area.
As Kneaded Bakery specializes in crusty, naturally leavened sourdough loaves, classic French baguettes, and challah. The bakery, which opened on Nov. 3 and currently operates weekend-only hours, also offers a range of noshes, from bialys and bostocks to morning buns.
But, make no mistake, this is not a place for croissants or cookies. As Kneaded is an East Coast-style bakery, with a large wall of freshly-baked breads coming straight off the hearth of a gas-fired deck oven from Italy. There are no plans to offer sweets, though you could beg for a babka.

The opening menu, which you can find here, includes some hard-to-find breads, including sesa miche, a whole wheat rye sourdough with sesame seeds, flax sunflower, spelt walnut and honey rye porridge sourdough.
Before starting As Kneaded Bakery, Berkowitz baked at Facebook, Parc Bistro in Philadelphia, and at San Mateo’s Pain Bakery.
